To do this, we launched UCC Chef Battles working with to-be-discovered Chefs in Toronto, Montreal and Ottawa. The battles, which continue on today, challenge Chefs to create several dishes from secret ingredients in under one-hour and provide audience goers with a real-time experience of life in the kitchen.
Starting in 2016, UCC will embark on an exciting new chapter (moving beyond the delivery of Chef Battles), with a series of programs designed to amplify the positive impact and reach of the culinary industry across Canada. From TALKS to EATS to GIVES, the main driver behind each of these programs is to inspire, inform and connect the food community.

Chef Joe Friday was born in North Carolina, raised in Okinawa, Japan, trained in French Cuisine. At the age of 20 he was one of 10 students selected from around the world to work in the international culinary program at Walt Disney World. He has staged restaurants in Europe, Japan, Norway and England. In the US, he was the Sous Chef at the Hilton Hawaii Village. In 2010, Chef Friday moved to Canada to work under Jason Bangerter for the opening of Peter Oliver and Michael Bonnocini’s new venture, Luma at TIFF Bell Lightbox. He was part of the team that opened Bar Mozza (Alimento Fine Foods Emporium) where he was also the Executive Chef. He is the Founder of the Underground Chef Co. (UCC) and part owner at Via Vai, a pizzeria and wine bar located in Toronto's financial district.
A Marketer turned Restaurateur, who worked with companies such as Microsoft, General Motors and OLG. Launched a event management company by bringing a European nightlife experience to Toronto such as Nikki Beach and Bagatelle. He is been working with Deadline Hollywood and The Wrap to produce Press Junkets and Pre and Post screening dinners and galas since 2008. Opened his first restaurant and supper club Roosevelt Room in 2009, and opened Storys Multilevel Event Venue (11 Duncan) with Hanif, and later went on to team up with his friend and business partner to open Italian concept restaurants.
Known as the ‘Godfather of the Grill’, his charm and fearless culinary spirit has led Ted to becoming an award-winning chef, author, food-entertainer and most recently professor of Modern Culinary Applications Innovations at the Canadian Food and Wine Institute at Niagara College.
